It is an itinerary that combines the environment, art, and cuisine of Puglia. Starting from the 400 meters altitude of Mount San Nicola, a lookout point over the countryside of Monopoli, and after a few kilometers, it’s already time to visit the stables of a small livestock company and taste cheeses and dairy products produced on-site. Then, we get back to cycling and, amidst rapid ups and downs, after visiting the suggestive 11th-century church of San Michele in Frangesto that dominates the Loggia di Pilato, we will literally dive into the plain of ancient olive trees to discover fortified farmhouses and churches carved into the rock, characterized by precious medieval frescoes. One of these crypts is located in a Botanical Garden with its over two thousand species of plants and flowers. The tour continues with a visit to a farm specializing in the production of tomatoes and cucumbers cultivated using natural pollination techniques and biological pest control. Before leaving, guests will be served an aperitif consisting of bruschetta with cherry tomatoes and extra-virgin olive oil. Extra-virgin olive oil will be the protagonist of the last stage of the tour. We will already be in Monopoli, and here we will reveal to you the characteristics of Puglia’s golden oil, its history, cultivation techniques, and the sensory analysis of different cultivars.
